Green Tea undergoes the process of withering and rolling but not fermentation as to resolve to its original colour which produces pale green-yellow liquid with a grassy flavour. Teas in Japan are all green with names like ‘Gyokuro’ or ‘Sencha’. Chinese teas include jasmine and the most famous and expensive green tea known as Dragon Well tea, grown in the hillsides of Hangzhou.
