Oolong Tea - This variety of tea ponders somewhere between the characteristics of the green and black tea. It is fermented like the black tea, but the process is stopped half way through. The most important stage in the process is to stop fermentation at exactly the right time when the leaves are 30% red and 70% green.

In order to produce good flavour, aroma and texture they are then rubbed repeatedly to release the enzymes and juices. This method produces a unique equilibrium between green tea’s delicacy and black tea’s depth. The guru of tea than grades the tea flavour and characteristics of each batch. Amongst all the Oolong teas in Taiwan, Formosa Oolong is rated as one of the finest.
